If you give a gal a recipe...
You can never go wrong with coconut!
This morning with Anali turned into a series of, "if you give a mouse a cookie." We began our morning with a good dose of chapters from our current read- Little Woman. The chapter we had left off on was about Jo's dreadful dinner where she puts salt in the fruit instead of sugar. Sugar apparently made Anali think of breakfast, breakfast made her talk about the Muffin Man...
Before you know it Anali was bathing and I on the other hand had pulled out my apron and had blueberry muffins on the counter by the time she came down stairs. I had all the ingredients for the recipe, which in such a spur of the moment occasion I was thankful I did. So without any particulars to texture or taste I ventured to try this recipe out.
Right as I was about to put the muffins in the oven I managed to put some walnuts in some and sprinkled flax seed and coconut in others. I suppose that is the series of events that occurs when you give a gal like me a recipe.
Gluten-Free BLUEBERRY MUFFINS
Ingredients
2 cups gluten-free all-purpose baking flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon kosher salt
1 teaspoon xanthan gum
1 teaspoon ground cinnamon
1/2 cup canola oil
2/3 cup agave nectar
2/3 cup rice milk
1 tablespoon vanilla extract
1 cup fresh blueberries

The Human Body
As unrealistic as this drawing may be, it is a representation of one of the continuing loves of my life... The Human Body.
It seems as though I get this "runners high" or better yet, "human high" every time I study for Anatomy class these days. I absolutely LOVE learning about all its components. I think the physiology part of it all is more fascinating to me, but even the structure of it all is majestic to me! The design of our body is overwhelmingly perfect! There is no doubt in my mind that there is a grand Creator!

In quick search of a human body drawing, I ran across this one. Hum... it was a tough choice but this one came in a close 2nd!
..and I love him too
Yup! Here's another young man I love very much. Man I'm a lucky gal to have my lil brother near by. Joseph ("Jabes") came up this weekend to spend Easter with the family. I sure loved watching conference together, eating good food and playing games with the familia... and having my lil bro made it all even more enjoyable!
I love this Man
This photograph is from my collection of my adventure in Brazil. I was amazed by this statue. I loved how it overlooked the entire city of Rio. No matter where you stood, you could always see Christ up above the city. How symbolic of our lives. No matter where we stand we should always be able to see Him.
This Easter I rejoice and am much in love with life because of this Man; Jesus Christ!
